MINT SAUCE

Pour 2/3 Cup of vinegar over 2 ounces of very finely chopped mint in a bowl. Add 1 Tbsp. brown sugar dissolved in 2 Tbsp. boiling water. Add a pinch of salt and pepper and let set to marinate. (1 to 2 hours) Also can be made in advance and refrigerated, then reheated. Serve over lamb, beef, or breast of chicken.

FRESH MINT

Although available all year around, fresh mint is usually one of the first fresh herbs to spring up and can be used to garnish dishes in the same manner as fresh parsley. With numerous varieties available, fresh mint is refreshing and fragrant and can be excellent seasoning for drinks, salads, vegetables, and to rub on a variety of meats and poultry. Minced and crushed, mint mixed with garlic and olive oil is an excellent marinate for lamb or beef.
