4 Large Artichokes

Olive Oil


1-1/2 Cups Breadcrumbs

1/2 Cup Romano or Parmesan Cheese, grated

Olive Oil

1 Clove Garlic, minced

3 Tablespoon Parsley, chopped

Salt and Pepper to taste

Mix the filling all together, using a little of the olive oil to moisten the breadcrumbs. Set aside. Remove small leaves at bottom of artichokes. Cut off Top of Artichoke 1" from the top and cut stem from base. Put artichoke in a bowl out side down in 1/2" water with 1 tablespoon of lemon. Cover with Saran and microwave for 5 to 8 minutes til artichoke can be pierced easily with a toothpick.

Remove and put on a cookie sheet stem end down. Spread open leaves. Mix filling ingredients and spoon between leaves. Drizzle oil over stuffed choke and broil under broiler for 2-3 minutes till crispy golden brown. Plate and serve. Beautiful and delicious artichoke flower presentation.
