ONION AND TOMATO SALAD WITH FRESH BASIL

The arrival of world famous fresh Vidalia Onions also indicates that Vine-Ripened Tomatoes and Fresh Basil can't be far off. (Greenhouse vine ripes and fresh herbs are available nearly all year long). The addition of fresh oranges, either late season Navels or early Valencias make this Salad Combo extraordinary as well as uniquely delicious.

Ingredients:

1 Large, Vidalia Onion (halved and sliced thin)

2 only Red Ripe Tomatoes (cut into medium chunks)

1/2 Cup Fresh Basil leaves (chopped, but not minced)

2 Navel Oranges or Valencias (small chunks)

1/3 Cup Olive Oil

1/4 Cup Balsamic Vinegar

2 Tablespoons Fresh Lemon Juice

Salt and Pepper to taste

This salad presentation can either be made in a large mixing bowl and then served or plattered and the dressing drizzled over the salad ingredients prior to serving. (Note: As an added dimension to this Salad, you can add pasta, black olives and/or Avocado). For dressing combine olive oil, Balsamic Vinegar, Lemon Juice, salt & pepper, blend and refrigerate to marinate. In a large mixing bowl, combine Vidalias, Tomatoes, Oranges and Basil. Add dressing, toss gently & serve. Exceptional flavor, texture and aroma.
