SWEET BAKED VEGETABLE SURPRISE

This versatile, time saving, delicious and nutritious offering is made extra savory and very sweet by the inclusion of large quantities of OSO Sweet Onions, which are available late December thru Mid - March from The Andes Mountains in Chile, South America. Incredibly sweet, yet extremely digestible OSO’s are one at the few Sweet Onions that hold their shape and texture during cooking without being strong. So, eat lots and lots healthy, Sweet Onions without distress with OSO Sweet baked Vegetable Surprise.

 Ingredients:

To your budget and desire select any of the following fresh vegetables to include in your surprise:

Potatoes

Yams

OSO Sweet Onions red radishes

Carrots

Turnips

Celery

Rutabagas

Yellow squash broccoli

Zucchini squash cauliflower

 

Butternut

Cabbage

Acorn

Jicama

Garlic

Mushrooms

Red peppers, gold, parsnips

Orange, green peppers

Also Needed:

1-2 cans of chicken or beef broth

Salt to taste

Pepper to taste

An herb or combination of herbs such as dill, basil or oregano.

Preheat oven to 350. Select your vegetables. Peel if necessary,and chunk into stew size pieces. Place in a colorful array your selected vegetables in a baking pan or dish. Pour the broth ovehe vegetables. Season with salt, pepper & herbs.

Cover and bake for 1 to 2 hours. You can add chicken parts as an option if you wish. The flavors of all the healthful vegetables will blend. Leftovers can be placed in a container or poly-bag to be reheated thru—out the week. It simply gets better and better each day as the flavors blend.
